  • 6 ounces whole milk ricotta
  • 1/4 cup Italian breadcrumbs
  • 1 large egg
  • 2 cups freshly grated Parmesan cheese
  • 5 ounces baby spinach
  • 6 bacon strips (for added flavor)

Instructions

  1. Preheat oven to 450F (235C) and line a baking sheet with parchment paper.
  2. Soak breadcrumbs in milk for 2 minutes.
  3. Finely chop onion, garlic, parsley, and sun-dried tomatoes in a food processor.
  4. In a large bowl, combine chopped vegetables with ground chicken, soaked breadcrumbs, egg, ricotta, Parmesan cheese, and seasoning; mix until combined.
  5. Shape mixture into 1820 meatballs and place on the baking sheet.
  6. Bake for 1520 minutes until golden brown and cooked through.
  7. In a skillet, cook bacon until crispy; set aside. Saut garlic in butter, then add cream and seasonings. Stir in Parmesan and spinach until wilted.
  8. Add baked meatballs to the sauce; simmer for an additional 2 minutes before serving.
