  • 1 tablespoon butter
  • 1 small yellow onion, diced
  • 3 celery stalks, thinly sliced
  • 2 carrots, thinly sliced
  • 6 cloves garlic, minced
  • 10 to 12 cups low sodium chicken broth
  • 2 pounds skinless, bone-in chicken breasts
  • 10 ounces egg noodles (or Carba-Nada noodles)
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil and butter in a Dutch oven over medium heat. Saut onions, celery, and carrots for about 5 minutes, then add garlic and cook for an additional 20 seconds.
  2. Pour in chicken broth and add thyme sprigs and bay leaves. Bring to a simmer.
  3. Add chicken breasts along with salt and pepper; cover and simmer for 2530 minutes until cooked through.
  4. Remove chicken, shred it using forks, and return it to the pot.
  5. Stir in noodles (add according to type) and cook until al dente.
  6. Taste and adjust seasoning before serving hot with chopped parsley.
