  • 2 cups cooked long-grain rice
  • 2 cooked chicken breasts, chopped
  • 14 oz can of chickpeas
  • 5 oz kale, shredded
  • 1/2 cup aioli or mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • Parmesan cheese

Instructions

  1. Cook rice and chill. If using uncooked rice, combine 2/3 cup rice with 1 cup water in a small pot, bring to boil, cover, reduce heat, cook for 12 minutes, then let sit covered for another 10 minutes.
  2. Preheat oven to 400°F (200°C). Spread chilled rice on a parchment-lined baking tray drizzled with olive oil and sprinkle with paprika and parmesan. Bake for 25–30 minutes until crispy.
  3. Meanwhile, roast drained chickpeas seasoned with smoked paprika and salt for about 15 minutes until golden.
  4. In a bowl, whisk together aioli or mayonnaise, Greek yogurt, fish sauce, miso paste, Dijon mustard, lemon juice, grated parmesan, and black pepper.
  5. Cook diced chorizo until crispy in a pan.
  6. In a large mixing bowl, combine shredded kale, scallions, chicken breast pieces, cooked chorizo, crispy rice, roasted chickpeas and toss with dressing.
