  • 1 avocado, sliced
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • 4 slices of Swiss, cheddar, or provolone cheese
  • 4 slices of sourdough or ciabatta bread
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Season chicken breasts with salt and pepper. In a skillet over medium-high heat, cook the chicken in olive oil for 6–7 minutes per side until fully cooked. Let rest before slicing.
  2. Slice the avocado, onion, and tomato; prepare cheese.
  3. Spread mayonnaise and Dijon on each slice of bread. Layer chicken, avocado, cheese, onion, and tomato on two slices; top with remaining bread.
  4. Grill sandwiches in a skillet with butter or olive oil over medium heat for 3–4 minutes per side until golden brown and cheese is melted.
  5. Slice in half after letting cool for one minute and serve warm.
