  • 6 slices bacon, chopped
  • 1 large yellow onion, diced
  • 2 celery stalks, chopped
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 6 cups low-sodium chicken broth
  • 3 medium russet potatoes, peeled and diced
  • 3 cups corn kernels (fresh or frozen)
  • 3 cups cooked shredded chicken
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. In a large pot over medium heat, cook bacon until crispy. Remove with a slotted spoon and leave drippings.
  2. Sauté onion, celery, and bell pepper in bacon drippings for about 5 minutes until softened.
  3. Add minced garlic; cook for an additional 30 seconds.
  4. Stir in flour; cook for 1-2 minutes to eliminate raw taste.
  5. Gradually pour in chicken broth while stirring constantly.
  6. Add diced potatoes, thyme, and smoked paprika; bring to a boil then simmer for 10-15 minutes until potatoes are tender.
  7. Mix in corn kernels, shredded chicken, and heavy cream; heat through for another 5 minutes.
  8. Season with salt and pepper; stir in half of the reserved bacon bits before serving.
