  • 2 1/2 cups white sugar
  • 3 tablespoons lemon juice
  • 1 vanilla bean (or 3 teaspoons vanilla extract)
  • 1 packet low-sugar pectin (49 g)

Instructions

  1. Prepare cherries by washing, stemming, and pitting them. Chop if desired.
  2. In a large pot, combine cherries, sugar, lemon juice, and vanilla bean seeds (or extract). Stir well.
  3. Heat over medium until boiling; then reduce heat slightly but maintain a gentle boil. Add pectin and stir continuously for about 5 minutes.
  4. To check consistency, place a spoonful on a cold plate; it should hold its shape.
  5. Carefully ladle hot jam into sterilized jars, leaving 1/4 inch headspace. Seal with lids.
  6. If canning, process jars in boiling water for about 10 minutes.
