  • 1.5 lbs fresh sour cherries (or three 14.5 oz cans)
  • 3/4 cup granulated sugar
  • 2 Tablespoons lemon juice
  • 1/3 cup cornstarch
  • 2 Tablespoons butter
  • 1/2 teaspoon ground cinnamon
  • Homemade pie crust (for top and bottom)
  • 1 large egg white (beaten)

Instructions

  1. Preheat your oven to 425F (220C).
  2. Prepare the cherries by washing them and removing pits if using fresh. Mix them with sugar, lemon juice, cornstarch, butter, and cinnamon until well combined.
  3. Roll out half of the pie crust and fit it into your pie dish. Pour in the cherry filling.
  4. Roll out the second half for the top crust, place it over the filling, and seal the edges.
  5. Brush the top with beaten egg white and sprinkle with sugar.
  6. Bake for about 45 minutes until golden brown. Cool before serving.
