  • 10-ounce jar maraschino cherries (reserve 12 tablespoons cherry juice)
  • 1 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 cup unsalted butter (room temperature)
  • 4 ounces cream cheese (room temperature)
  • 1 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup white chocolate melting wafers

Instructions

  1. Drain and chop the maraschino cherries; place on paper towels to dry.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a stand mixer, cream butter and cream cheese until fluffy; gradually add sugar until pale. Mix in egg, vanilla extract, almond extract, and reserved cherry juice.
  4. Combine dry ingredients with wet mixture until just blended; gently fold in chopped cherries. Chill dough for at least one hour.
  5. Preheat oven to 375F (190C) and line baking sheet with parchment paper.
  6. Use a cookie scoop to portion dough onto the baking sheet.
  7. Bake for about 10 minutes or until edges are golden; cool on wire rack.
  8. For optional drizzle, melt white chocolate wafers and drizzle over cooled cookies.
