  • 1/4 cup extra virgin olive oil
  • 3 large garlic cloves, thinly sliced
  • 45 San Marzano peeled tomatoes
  • 2 handfuls fresh baby spinach
  • 2 (15 oz) cans Cannellini white beans, rinsed and drained
  • 2 cups shredded mozzarella cheese
  • Italian seasoning and crushed red pepper flakes to taste

Instructions

  1. Preheat your oven to 475F.
  2. Heat olive oil in an ovenproof skillet over medium-high heat. Add garlic and saut until golden.
  3. Carefully add the San Marzano tomatoes and mash them down with a potato masher or spoon for about a minute.
  4. Stir in spinach and Cannellini beans along with Italian seasoning, red pepper flakes, salt, and pepper until well combined.
  5. Top evenly with shredded mozzarella cheese and bake for 8-10 minutes until melted and bubbly.
  6. For an extra crispy top, broil for an additional 2 minutes.
  7. Serve immediately with tortilla chips or your choice of sides.
