  • 12 ounces jumbo pasta shells
  • 1 pound spicy sausage (casing removed)
  • 1 cup chopped broccolini
  • 16 ounces pumpkin puree
  • 1/4 cup water
  • 1/4 cup ricotta cheese
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup shredded cheese blend (Mac 'n Cheese & cheddar)
  • 4 sage leaves (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375F (191C).
  2. Cook the jumbo pasta shells in boiling water for about 7 minutes until al dente, then transfer to ice water.
  3. In a skillet, brown the sausage over medium-high heat, adding broccolini until softened.
  4. In the same skillet, combine pumpkin puree, water, ricotta, nutmeg, and cheeses over medium-low heat until melted.
  5. Mix sausage mixture with some sauce; stuff each shell with filling.
  6. Layer stuffed shells in a casserole dish with remaining sauce on top; sprinkle extra cheese if desired.
