  • 2 medium eggplants
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Fresh basil
  • Garlic powder
  • Dried oregano
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice eggplants into ¼-inch rounds, salt them, and let sit for 10–15 minutes to draw out moisture.
  3. Pat slices dry, brush with olive oil, and roast on a baking sheet for 15–20 minutes until tender.
  4. In a mixing bowl, combine ricotta, mozzarella, Parmesan, egg, chopped basil, garlic powder, oregano, salt, and pepper until well mixed.
  5. Once cool enough to handle, spoon cheese mixture onto one end of each eggplant slice and roll up tightly.
  6. Place seam-side down in a baking dish and cover with marinara sauce if desired.
  7. Bake for 20–25 minutes until cheese is melted and bubbly.
