  • 12 oz pasta (rotini or preferred shape)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Seasonings: Cajun seasoning, garlic powder, onion powder, salt, and pepper
  • Fresh parsley for garnish

Instructions

  1. Cook pasta in salted boiling water until al dente; drain and set aside.
  2. In a skillet over medium-high heat, heat olive oil and season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook until golden brown (6–7 minutes). Remove from skillet.
  3. Melt butter in the same skillet; sauté minced garlic briefly. Add chicken broth and heavy cream; let simmer.
  4. Stir in mozzarella, cheddar, and Parmesan cheeses until melted into a creamy sauce.
  5. Return cooked chicken and drained pasta to the skillet; toss to coat well in the cheese sauce and simmer briefly.
