  • 4 burrito-sized flour tortillas
  • 16 slices cheddar cheese
  • ½ cup chopped onion
  • ½ cup pickles
  • Olive oil
  • ½ cup mayo
  • 2 Tablespoons grated onion
  • 2 Tablespoons ketchup
  • 1 Tablespoon pickle relish
  • 2 teaspoons yellow mustard
  • 1 teaspoon white vinegar
  • ¼ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce

Instructions

  1. Prepare the burger sauce by whisking together mayo, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika in a mixing bowl. Store in the fridge.
  2. In a skillet over medium-high heat, brown the ground beef until cooked through. Drain excess grease and season with salt, pepper, garlic powder, and Worcestershire sauce.
  3. On each tortilla half, layer 2 slices of cheese, followed by seasoned beef, onions, pickles, and another 2 slices of cheese. Fold the tortillas.
  4. Heat olive oil in a griddle or skillet over medium-high heat; cook each quesadilla for 2-3 minutes per side until golden brown and cheese is melted.
  5. Slice into triangles and serve warm with the prepared burger sauce.
