  • 1 tsp sugar
  • 2 tsp active dry yeast
  • 2 cups all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1 cup crumbled feta cheese
  • 2 cups shredded mozzarella cheese
  • 1 beaten egg
  • 2 tbsp chopped fresh herbs (e.g., rosemary, thyme)
  • Butter for brushing

Instructions

  1. In a mixing bowl, combine water, sugar, and yeast; let it froth for 510 minutes.
  2. Add flour, olive oil, and salt; mix until dough forms. Knead for 57 minutes until smooth.
  3. Place in a greased bowl, cover, and let rise for about 1 hour until doubled.
  4. For the filling, mix feta, mozzarella, egg, herbs, and pepper in another bowl.
  5. Preheat oven to 400F (200C) and line a baking sheet with parchment paper.
  6. Punch down the dough; divide into eight pieces. Roll each into a circle about 6 inches wide.
  7. Add filling to one half of each circle; fold over and seal edges.
  8. Brush with melted butter and bake for 1520 minutes until golden brown.
