  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1 1/2 tsp salt
  • 2 tbsp (25 g) granulated white sugar
  • 2 eggs, whisked
  • 1 tbsp vanilla extract
  • 1/2 cup (112 g) unsalted butter, very softened
  • 2 chai tea bags
  • 1/3 cup (80 ml) heavy cream
  • 1/2 cup (112 g) unsalted butter, very softened
  • 1 cup (220 g) light brown sugar, packed
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 3/4 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1/3 cup (116 g) honey
  • 1 1/2 tsp vanilla extract
  • 6 tbsp (84 g) unsalted butter, very softened
  • 6 oz (170 g) cream cheese, softened
  • 3/4 cup (97 g) powdered sugar

Instructions

  1. Warm 1 1/4 cups milk to 110F, then mix with 2 1/4 tsp yeast and 1 tsp sugar; let bloom for 5 minutes.
  2. In a mixing bowl, combine 4 3/4 cups flour, spices, salt, and remaining sugar. Add bloomed yeast mixture, eggs, and vanilla; mix well.
  3. Gradually mix in 1/2 cup softened butter until dough forms. Knead until smooth.
  4. Allow dough to rise in a greased bowl for about 60 minutes until doubled.
  5. Prepare filling by brewing chai tea in heavy cream; mix with sugar and spices.
  6. Roll out dough into a rectangle, spread filling evenly, then roll up tightly and slice into pieces.
  7. Place rolls in a baking dish and let rise again before baking at 350F for about 25 minutes.
