  • 1 cup grated potatoes
  • 1 grated onion
  • ¾ cup chickpea flour
  • 1 tsp grated ginger
  • 1 grated garlic clove
  • 1 small finely chopped chili (or chili powder)
  • a handful of chopped parsley (or cilantro)
  • 1 ¼ tsp curry powder (or garam masala)
  • ½ tsp cumin
  • 1 tsp paprika powder
  • 1 tsp sea salt (or to taste)
  • ½ tsp black pepper (or to taste)
  • 3 tbsp water
  • 4 tbsp vegan mayo
  • 1 clove grated garlic for dip
  • chili flakes for dip

Instructions

  1. In a mixing bowl, combine grated carrots, potatoes, onion, ginger, garlic, and chili.
  2. Add chickpea flour along with cumin, curry powder, paprika, salt, pepper, and chopped herbs; mix well.
  3. Gradually incorporate water until you achieve a thick batter consistency.
  4. Heat oil in a frying pan over medium heat; drop spoonfuls of batter to form fritters.
  5. Cook for 3-4 minutes on each side until golden brown and crispy.
  6. For the garlic dip, mix vegan mayo with grated garlic and chili flakes.
  7. Serve hot with the garlic dip.
