Calamari Puttanesca is a vibrant Mediterranean dish that combines tender calamari with the bold flavors of olives, capers, and anchovies in a rich tomato sauce.   • 1 lb fresh or frozen calamari (cleaned and cut into rings)
  • 2 tbsp olive oil
  • 1 medium onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 cup canned crushed tomatoes
  • cup pitted black olives (roughly chopped)
  • 2 tbsp capers (drained and rinsed)
  • 2 anchovy fillets (minced, optional)
  • tsp dried oregano
  • Salt and pepper to taste
  • cup white wine
  • 12 oz spaghetti or linguine
  • Fresh parsley and lemon zest for garnish

Instructions

  1. Boil salted water in a large pot; cook pasta until al dente, then drain.
  2. In a skillet, heat olive oil over medium heat. Saut onion until translucent, then add garlic and red chili flakes; cook until fragrant.
  3. Stir in crushed tomatoes, olives, capers, anchovies (if using), oregano, salt, and pepper; mix well.
  4. Deglaze with white wine; let simmer for about 10 minutes until slightly thickened.
  5. Add calamari to the sauce; cook for 35 minutes until opaque.
  6. Toss cooked pasta into the skillet to coat with sauce; serve immediately garnished with parsley and lemon zest.
