  • 2 cups white beans (cannellini or great northern)
  • 4 cups chicken broth
  • 4 ounces cream cheese
  • 5 cups heavy cream
  • 2 tablespoons Cajun seasoning
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeo, sliced
  • Lime juice and fresh cilantro for garnish

Instructions

  1. Season chicken with salt, pepper, and Cajun seasoning. Sear in a Dutch oven until golden; remove and shred.
  2. In the same pot, saut onion, garlic, bell pepper, and jalapeo until soft.
  3. Add chicken broth and white beans; return shredded chicken to pot.
  4. Simmer for 2030 minutes on low heat.
  5. Stir in cream cheese and heavy cream until smooth; adjust seasoning.
  6. Finish with lime juice before serving hot with cilantro garnish.
