  • 1 teaspoon Cajun seasoning
  • 1 red bell pepper (diced)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 cups chicken broth
  • cups heavy cream
  • 10 oz Rotel diced tomatoes with green chilies
  • cup cheddar jack cheese (shredded)
  • Lime wedges and fresh cilantro for garnish

Instructions

  1. Gather all ingredients; dice the red bell pepper and mince the garlic.
  2. In a large skillet over medium heat, add olive oil. Saut seasoned shrimp for 2-3 minutes until pink; set aside.
  3. In the same skillet, melt butter. Saut garlic and bell pepper for about 2 minutes.
  4. Sprinkle flour over vegetables; whisk to create a roux. Gradually add chicken broth, then heavy cream. Simmer until thickened.
  5. Stir in honey, hot sauce, diced tomatoes, cheese, lime juice, and remaining seasonings.
  6. Add shrimp back to skillet; coat in sauce until heated through.
