  • 500 grams Medium Shrimp (1 pound), cleaned and deveined
  • 1+1/4 cups Long grain White rice
  • 23 tablespoons Cajun Spice mix
  • 2 tablespoons Oil or Butter
  • 1 large Onion, chopped
  • 1 tablespoon Minced garlic
  • 23 Medium ripe Tomatoes, diced (about 1 cup)
  • 1 cup Bell pepper, diced
  • 2.5 cups Chicken stock
  • Salt to taste

Instructions

  1. Pat dry the shrimp and toss with Cajun seasoning.
  2. Heat oil/butter in a large skillet over medium-high heat; cook shrimp for about 2 minutes on each side until pink. Remove from pan.
  3. In the same pan, saut onions and garlic until softened.
  4. Toast the rice in the pan for about 2 minutes.
  5. Add bell pepper, tomatoes, and remaining Cajun seasoning; mix well.
  6. Pour in warm chicken stock and season with salt; cover and cook until rice is three-quarters done.
  7. Stir in cooked shrimp; cover and simmer for another 5-6 minutes until rice is fully cooked.
  8. Let rest for 10 minutes before fluffing with a fork.
