  • 2 chicken breasts, cubed
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • cup grated Parmesan cheese
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375F (190C).
  2. Cook the pasta according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add cubed chicken and Cajun seasoning; cook until browned (57 minutes).
  4. Remove chicken; saut diced onion, red bell pepper, and minced garlic in the same skillet for about 34 minutes.
  5. Stir in cream cheese until melted, then add heavy cream and broth to create a smooth sauce. Mix in cheeses and seasonings until creamy.
  6. Combine cooked chicken and drained pasta into the skillet mixture.
  7. Transfer to a greased baking dish and bake for 2025 minutes until golden on top.
