  • 1 lb chicken breasts
  • cup Greek yogurt
  • cup mayonnaise
  • 1.5 teaspoons Dijon mustard
  • cup grated parmesan cheese
  • 810 ounces romaine lettuce
  • 2 hard-boiled eggs
  • Panko breadcrumbs

Instructions

  1. Prepare the dressing by mixing Greek yogurt, mayonnaise, Dijon mustard, parmesan cheese, minced garlic, capers, anchovy paste, and lemon juice in a bowl. Season to taste.
  2. Toss chopped romaine lettuce and grated hard-boiled eggs in another bowl with half the dressing.
  3. Season chicken cutlets with salt and pepper. Dredge in cornstarch, dip in egg mixture, then coat with panko and Italian breadcrumbs mixed with parmesan.
  4. Preheat air fryer to 375F and cook cutlets for about 15 minutes until golden brown.
  5. Serve cutlets on top of the dressed salad with extra parmesan and lemon wedges.
