  • 16 oz frozen diced butternut squash
  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta
  • 1/3 cup reserved pasta water

Instructions

  1. Preheat the oven to 450F (232C) and line a baking sheet with parchment paper.
  2. Spread frozen butternut squash, tomatoes, and onion on the baking sheet.
  3. Drizzle with olive oil and season with salt, pepper, and thyme. Toss to coat.
  4. Roast for 20 minutes until vegetables are tender.
  5. While roasting, cook pasta in salted boiling water according to package instructions until al dente.
  6. Reserve 1/3 cup of pasta water before draining.
  7. Blend roasted vegetables with reserved water until smooth.
  8. Mix creamy sauce with cooked pasta and serve immediately.
