  • 12 oz rotini pasta
  • 2 cups cooked, diced boneless skinless chicken breast
  • 1/2 cup buffalo sauce
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz cream cheese
  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup panko breadcrumbs (for topping)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook rotini pasta in salted water until al dente; drain and set aside.
  2. Saut diced chicken seasoned with salt and pepper in a skillet over medium heat until golden brown (5-7 minutes).
  3. In a saucepan, melt butter over medium heat, add flour to create a roux, then whisk in milk until smooth. Stir in cream cheese and cheddar until creamy.
  4. Combine cooked pasta, cheese sauce, and sauted chicken in a large bowl.
  5. Transfer to a greased baking dish, top with panko breadcrumbs, and bake at 350F for 20-25 minutes or until golden.
