  • 6 Roma tomatoes (diced)
  • 1/3 cup basil leaves (chopped)
  • 5 garlic cloves (divided)
  • 1 Tbsp balsamic vinegar
  • 3 Tbsp extra virgin olive oil (for the topping)
  • 2 Tbsp extra virgin olive oil (for toasts)
  • Sea salt and black pepper to taste
  • 1 baguette
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Prepare the Tomato Mixture: In a bowl, mix diced tomatoes, chopped basil, minced garlic (3 cloves), balsamic vinegar, olive oil (2 Tbsp), sea salt, and black pepper. Let it sit.
  2. Toast the Baguette: Preheat your oven to 375°F (190°C). Slice the baguette into 1/2-inch pieces. Brush both sides with olive oil and sprinkle with minced garlic and parmesan cheese. Bake for about 7 minutes until golden brown.
  3. Assemble: Top each toasted slice with the tomato mixture. Drizzle with balsamic glaze if desired.
