  • 68 medium tomatoes
  • 1 onion (optional)
  • 2 cloves garlic (pressed)
  • 4 tablespoons balsamic vinegar
  • 5 tablespoons olive oil
  • Fresh basil (4 sprigs)
  • Salt and pepper to taste
  • 1 baguette

Instructions

  1. Wash and dice the tomatoes; chop the onion if using.
  2. In a bowl, combine tomatoes, pressed garlic, onion, basil, olive oil, balsamic vinegar, salt, and pepper.
  3. Preheat the oven to 200C (392F) and slice the baguette into 1 cm thick pieces.
  4. Lightly rub each bread slice with peeled garlic and toast in the oven for 57 minutes until golden brown.
  5. Top each toasted slice with the tomato mixture and sprinkle with parmesan if desired.
  6. Serve immediately as a refreshing appetizer.
