  • cup water
  • 3 cups chopped broccoli
  • 1 medium honeycrisp apple
  • ? cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • tbsp honey
  • sea salt
  • black pepper

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water; bring to a boil. Reduce heat to low, cover, and simmer for about 13 minutes until water is absorbed. Fluff with a fork and let cool.
  2. Chop broccoli into bite-sized pieces and dice the honeycrisp apple.
  3. In a bowl, whisk together olive oil, apple cider vinegar, dijon mustard, honey, salt, and pepper.
