  • 2 large croissants
  • 2 large eggs
  • 2 slices cheddar cheese
  • 2 slices cooked Turkey Bacon
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350F (175C).
  2. Heat a skillet over medium heat for about 1-2 minutes.
  3. In a bowl, whisk together the eggs until fully combined.
  4. Melt the butter in the skillet, then add the eggs. Cook undisturbed for 1-2 minutes until edges set.
  5. Lift edges gently with a spatula while tilting the pan to allow uncooked egg to flow outward. Season with salt and pepper once set.
  6. Fold the eggs and set aside.
  7. Slice each croissant in half horizontally and place them cut side up on a baking sheet.
  8. Warm croissants in the oven for about 5 minutes.
  9. Spread mayonnaise on the bottom half and Dijon mustard on top half of each croissant.
  10. Layer cheddar cheese, Turkey Bacon, and eggs on each sandwich.
  11. Press down gently with the top halves of croissants and serve immediately.
