  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • Optional: Fresh parsley for garnish

Instructions

  1. Cut each chicken breast in half lengthwise to create four thinner pieces. Season both sides with garlic powder, salt, and pepper.
  2. In a skillet over medium-high heat, melt olive oil and butter. Cook the seasoned chicken for about 5-6 minutes per side until browned and cooked through. Transfer to a plate.
  3. In the same skillet, saut chopped onions until softened (about 5 minutes). Add more olive oil if needed.
  4. Pour in chicken broth and add softened Boursin cheese; stir until smooth and let bubble for around 5 minutes.
  5. Return the chicken to the skillet along with any juices from the plate. Warm through for another couple of minutes until the sauce thickens as desired.
  6. Taste and adjust seasoning before serving hot.
