  • 1 cup cake flour (sifted)
  • 1 1/2 cups sugar
  • 9 egg whites
  • 1/4 tsp salt
  • 1 tsp cream of tartar
  • 1 vanilla bean (seeds scraped)
  • 1 tsp almond extract
  • 3 cups fresh strawberries (sliced)
  • 4 to 6 tbsp bourbon
  • 1/4 cup turbinado sugar

Instructions

  1. Preheat the oven to 350F (175C) and lightly grease a cupcake pan.
  2. In one bowl, mix sifted cake flour with half of the sugar.
  3. In another bowl, beat egg whites until frothy; add salt and cream of tartar, continuing to beat until stiff peaks form. Gradually mix in the remaining sugar.
  4. Gently fold in the dry ingredients into the egg white mixture, taking care not to deflate.
  5. Add vanilla bean seeds and almond extract; fold gently.
  6. Pour batter into cupcake pans and bake for about 15 minutes or until a toothpick comes out clean.
  7. While baking, combine sliced strawberries with bourbon and turbinado sugar; let sit to macerate.
  8. Once cooled, top each cupcake with macerated strawberries before serving.
