  • cup bourbon
  • 4 salmon fillets (about 1 pounds)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons garlic (minced)
  • 1 teaspoons kosher salt
  • teaspoon black pepper
  • teaspoon red pepper flakes
  • 2 medium peaches (pitted, thinly sliced)
  • parsley (for garnish)

Instructions

  1. In a bowl, mix peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes. Reserve half the marinade.
  2. Marinate the salmon in the remaining mixture for at least 30 minutes.
  3. Preheat your oven to 375F (190C).
  4. Sear salmon in an oven-safe skillet over medium-high heat for 2-3 minutes on each side.
  5. Add sliced peaches and reserved marinade; bake for 12-15 minutes until salmon reaches an internal temperature of 145F.
  6. Serve hot, garnished with parsley.
