  • 2 cups blueberries (fresh or frozen)
  • 1 cup granulated sugar (divided)
  • 1 tablespoon lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3 large egg yolks

Instructions

  1. In a small saucepan over medium heat, combine 1/4 cup sugar, blueberries, and lemon juice. Bring to a boil and mash the berries gently. Puree the mixture in a blender and strain to remove solids.
  2. In a medium bowl, mix 1 cup heavy cream with vanilla extract.
  3. In another saucepan, heat remaining milk, heavy cream, sugar, and salt until the sugar dissolves.
  4. Whisk egg yolks in a small bowl. Gradually add warm milk mixture to yolks while whisking continuously.
  5. Return the mixture to the saucepan and stir in blueberry puree until thickened.
  6. Strain into the bowl with cream, cool in an ice bath, cover and refrigerate for 4-6 hours.
  7. Churn according to your ice cream maker's instructions until soft-serve consistency is achieved.
  8. Transfer to a container and freeze until solid (about 4 hours).
