  • 250 g digestive or graham crackers
  • 300 g fresh blueberries
  • 800 g full-fat cream cheese
  • 260 g granulated sugar
  • 200 g sour cream
  • 4 large eggs
  • 2 tbsp granulated sugar (for crust)
  • 75 g butter
  • 110 g all-purpose flour
  • 80 g dark brown sugar
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract
  • 1 tbsp all-purpose flour (for filling)
  • 2 tsp lemon juice

Instructions

  1. Preheat the oven to 175C (350F). Crush the digestive or graham crackers into fine crumbs, and mix with sugar and melted butter. Press into the bottom of a springform pan.
  2. Toss fresh blueberries with sugar, flour, and lemon juice in a separate bowl.
  3. Beat cream cheese until smooth; gradually add granulated sugar, then mix in sour cream, cornstarch, vanilla extract, and eggs until just combined.
  4. Layer half of the cheesecake batter over the crust, followed by half of the blueberry mixture. Repeat with remaining batter and berries.
  5. Bake for about 85 minutes until set around edges but slightly jiggly in center. Cool gradually in the oven for one hour before refrigerating.
