  • cup unsalted butter – melted
  • 12 oz. cream cheese
  • cup sugar
  • 1 teaspoons vanilla
  • 2 Tablespoons flour
  • 1 large egg
  • 2 cups fresh blueberries
  • cup granulated sugar
  • 3 Tablespoons all-purpose flour
  • 1 Tablespoon cornstarch
  • 1 Tablespoon lemon juice
  • whipped cream or vanilla ice cream

Instructions

  1. Preheat your oven to 350F (175C).
  2. In a bowl, combine graham cracker crumbs, light brown sugar, cinnamon, and melted butter; press into a 9-inch pie pan.
  3. For the crumble topping, mix flour, brown sugar, oats, and cinnamon with melted butter until crumbly.
  4. Beat cream cheese in another bowl until smooth; add sugar, vanilla extract, flour, and egg until blended.
  5. Pour cheesecake filling into the crust, then layer the blueberries tossed with granulated sugar and lemon juice on top.
  6. Sprinkle the crumble topping evenly over blueberries.
  7. Bake for about 40 minutes until set in the center; cool slightly before serving.
