  • ½ tablespoon smoked paprika
  • 1 cup grilled or roasted corn
  • 1 cup pineapple, finely diced
  • ¼ cup sour cream
  • Warm corn tortillas
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon fresh cracked black pepper
  • Pinch of cayenne
  • 2 tablespoons avocado oil
  • ¼ cup red onion, finely diced
  • 1 jalapeno, finely minced
  • ½ bunch cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon agave
  • 1 teaspoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon fresh cracked pepper
  • ¼ cup mayo
  • 1 chipotle pepper in adobo sauce, finely chopped + 1 tablespoon adobo sauce
  • ½ lime, juiced (about 12 tablespoons juice)
  • Purple cabbage, finely shredded
  • Cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a small bowl, mix together blackening spices.
  2. Pat the mahi mahi dry and drizzle with avocado oil. Coat fillets evenly with the spice mixture.
  3. Preheat oven to broil and arrange rack near the top.
  4. Broil fish on a lined baking tray for about 8 minutes until it flakes easily with a fork.
  5. While the fish cooks, combine corn, pineapple, jalapeño, cilantro, red onion, lime juice, agave, olive oil, salt, and pepper in a bowl for salsa.
  6. For the chipotle sauce, whisk sour cream, mayo, chipotle pepper with adobo sauce, and lime juice in another bowl.
  7. Warm tortillas according to package instructions and assemble tacos by spreading sauce on each tortilla followed by cabbage, fish, and salsa.
