  • 250 grams Biscoff cookies
  • 1/3 cup unsalted butter
  • 907 grams cream cheese
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 cup Biscoff cookie butter
  • 4 large eggs

Instructions

  1. Preheat the oven to 325F (160C).
  2. Crush Biscoff cookies and mix with melted butter; press into a springform pan.
  3. Beat cream cheese, sugars, and sour cream until smooth. Add Biscoff cookie butter, vanilla extract, and salt; mix well.
  4. Incorporate eggs one at a time on low speed until just combined.
  5. Pour filling over crust and bake for about 60 minutes until slightly jiggly in the center.
  6. Cool at room temperature for an hour, then refrigerate for at least two hours or overnight.
  7. Before serving, top with warmed Biscoff spread and crumbled cookies.
