  • 2 lbs beef chuck roast
  • 12 corn tortillas
  • 2 cups shredded cheese (Monterey Jack or cheddar)
  • 1 large onion
  • 4 garlic cloves
  • 2 cups beef broth
  • 2 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 1 chipotle pepper in adobo sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped red onion
  • Lime wedges for serving

Instructions

  1. Soak dried chiles in hot water for 10 minutes. Blend with garlic, onion, chipotle pepper, vinegar, cumin, oregano, paprika, salt, and pepper until smooth.
  2. In a large pot or slow cooker, combine beef chunks with the blended sauce and beef broth. Cook on low for 6 hours (slow cooker) or simmer on low heat for 3 hours (stovetop) until tender.
  3. Shred the cooked beef and return it to the sauce. Preheat the oven to 375F.
  4. Warm tortillas briefly on a skillet. Fill each tortilla with shredded birria and cheese, roll tightly, and place seam-side down in a baking dish.
  5. Top with remaining cheese and bake uncovered for 25 minutes until bubbly and golden brown.
  6. Garnish with cilantro and red onion; serve with lime wedges.
