  • 3 tablespoons mayonnaise
  • 3 tablespoons sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 small jalapeo, finely diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat a large skillet over high heat. Add corn and cook undisturbed for 2-3 minutes to char. Stir and repeat until golden brown. Remove from heat.
  2. In a mixing bowl, combine softened cream cheese, mayonnaise, and sour cream until smooth.
  3. Stir in red onion, jalapeo, garlic powder, chili powder, lime juice, salt, black pepper, and half the cotija cheese.
  4. Gently fold in charred corn until evenly coated.
  5. Transfer to a serving bowl and top with remaining cotija cheese and cilantro.
