  • 3 large sweet potatoes
  • 3 tablespoons olive oil
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon crushed red chili flakes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey
  • 1/3 cup crumbled feta cheese
  • Chopped fresh chives or parsley

Instructions

  1. Preheat your oven to 400F (200C).
  2. Wash and scrub the sweet potatoes, then pat them dry and prick several times with a fork.
  3. In a mixing bowl, combine olive oil and spices (cinnamon, smoked paprika, cumin, coriander, chili flakes, salt, and pepper). Mix well.
  4. Rub the spice mixture over each sweet potato generously.
  5. Place on a baking sheet lined with aluminum foil and bake for about 40 minutes until tender.
  6. Once baked, drizzle honey over each potato and top with crumbled feta and chopped herbs.
  7. Serve warm, optionally drizzling extra honey for added sweetness.
