  • 3 Tbsp fresh lemon juice
  • 1 1/2 tsp lemon zest
  • 3 Tbsp honey
  • 1 3/4 cups heavy cream (well chilled)
  • 12 oz cream cheese (slightly softened)
  • 1 1/4 cups powdered sugar
  • 1 1/2 tsp vanilla extract
  • Fresh strawberries, blueberries, raspberries (optional)

Instructions

  1. Slice the angel food cake into thick slices and brush with a mixture of lemon juice, zest, and honey. Cut into cubes.
  2. Whip the heavy cream until stiff peaks form. In another bowl, mix cream cheese with powdered sugar and vanilla until fluffy; gently fold in whipped cream.
  3. In a trifle dish, layer half of the cake cubes, followed by blueberries, whipped cream mixture, and sliced strawberries. Repeat layers.
  4. Top with remaining berries and mint leaves before serving.
