  • 1 center-cut beef tenderloin roast (4 to 4 pounds)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons avocado oil
  • 6 tablespoons softened butter
  • 6 garlic cloves (minced)
  • 1 teaspoon finely chopped fresh rosemary leaves
  • 1 teaspoon finely chopped fresh thyme leaves

Instructions

  1. Bring the beef tenderloin to room temperature (1-2 hours).
  2. Mix softened butter, minced garlic, rosemary, and thyme in a small bowl.
  3. Preheat your oven to 425F (220C).
  4. Pat the beef dry, then season generously with salt and pepper.
  5. Heat avocado oil in a large cast-iron pan over medium-high heat. Sear the beef on all sides for about 10 minutes.
  6. Spread herbed garlic butter on top of the beef, then roast in the oven for 15-20 minutes until desired doneness is reached.
  7. Rest for 10-15 minutes before slicing into thick pieces.
