  • 1 pound lean ground beef (93/7)
  • 6 cups diced sweet potatoes
  • 1 tablespoon olive oil (for beef)
  • 2 tablespoons olive oil (for sweet potatoes)
  • 1 packet taco seasoning
  • Cilantro-lime sauce (optional)

Instructions

  1. Prepare rice if desired.
  2. Preheat oven to 425F (220C). Toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a large sheet pan and roast for about 30 minutes until tender.
  3. In a nonstick skillet, heat olive oil over high heat. Saut diced onion until golden. Add ground beef, sear and crumble it until browned. Stir in chicken broth, taco seasoning, tomato paste, and minced garlic; cook until fragrant.
  4. Assemble bowls: divide rice among four bowls and top with roasted sweet potatoes and beef mixture. Add your favorite toppings.
