  • 2 lbs beef chuck, cut into 1-inch cubes
  • 6 slices thick-cut bacon, diced
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 4 cloves garlic, minced
  • 2 cups dry red wine
  • 2 cups beef stock
  • 1 lb cremini mushrooms, halved
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350F (175C).
  2. In a Dutch oven over medium heat, cook bacon until crispy; remove and set aside.
  3. Brown seasoned beef cubes in reserved bacon fat; transfer to a plate.
  4. Saut onions and carrots until softened; add garlic and tomato paste.
  5. Sprinkle flour over vegetables; cook for a few minutes.
  6. Deglaze with red wine and combine with stock, bay leaf, thyme, beef, and bacon.
  7. Cover pot and braise in the oven for about 2 hours.
  8. Saut mushrooms and pearl onions in butter until golden brown; add them to the stew during the final half hour.
  9. Adjust seasoning before serving.
