  • 1 batch of Sweet Potato Pizza Crusts (recipe makes 2 crusts, the amount you need for this pizza recipe)
  • 1/2 tablespoon extra virgin olive oil
  • 1 cup cooked chickpeas
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Pinch of fine sea salt
  • Freshly ground black pepper to taste
  • 1/2 a medium bunch green kale, stemmed and finely chopped (about 2 cups chopped)
  • 1 1/2 teaspoons extra virgin olive oil
  • 1/2 cup of your favourite barbecue sauce
  • 1/2 a medium red onion, finely diced
  • 1 cup grated cheese (strong cheddar or Monterey Jack are both tasty options, or use vegan cheese)
  • 1/2 cup quality mayonnaise (such as Primal Kitchen or Chosen Foods)
  • 2 tablespoons finely chopped cilantro
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • 1 large garlic clove, minced
  • Pickled jalapeos

Instructions

  1. Prepare sweet potato crusts in advance; keep them covered until ready to use.
  2. In a skillet, heat olive oil over medium heat and saut chickpeas until lightly browned. Add spices and salt, then cook briefly.
  3. Massage chopped kale with olive oil and salt until tender.
  4. Preheat oven to 450F. Assemble the pizzas by spreading barbecue sauce on the crusts, followed by chickpeas, red onion, and cheese.
  5. Bake for about 5 minutes before adding marinated kale; return to the oven for another 5 minutes until crispy.
  6. Prepare the cilantro lime aioli by whisking together all ingredients in a bowl.
  7. Let pizza cool slightly before slicing and serving with aioli and pickled jalapeos.
