  • 1 pound large shrimp
  • 1 cup mayo
  • 1 teaspoon chili garlic sauce
  • 2 tablespoons Thai sweet chili sauce
  • 3 tablespoons cornstarch
  • 2/3 cup unsweetened almond milk
  • 1 tablespoon lemon juice
  • 1 large egg
  • 1 1/4 cups panko breadcrumbs
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • avocado oil
  • 4 cups cooked rice of your choice
  • 1 large avocado (sliced)
  • 1 cup edamame (shelled)
  • 1 cup carrot (julienned)
  • 12 cups English cucumber (sliced)
  • 1/4 cup fresh cilantro (chopped)
  • 4 lime wedges

Instructions

  1. Mix mayo, chili garlic sauce, and Thai sweet chili sauce in a bowl for the sauce.
  2. Prepare three bowls: one with cornstarch, another with almond milk mixed with lemon juice and egg, and the last with panko breadcrumbs mixed with seasonings.
  3. Coat shrimp first in cornstarch, then dip in milk mixture, and finally coat in panko.
  4. Heat oil to 375F in a skillet and fry shrimp until golden brown (2-3 minutes per batch).
  5. Toss cooked shrimp with half the sauce.
  6. Assemble bowls by layering rice, topped with shrimp, avocado slices, edamame, carrots, cucumbers, cilantro, and remaining sauce.
