Bang Bang Salmon Bites are a delightful fusion of flavor and texture, combining crispy panko-crusted salmon with a creamy, spicy sauce.   • 1 lb fresh skinless salmon (cubed)
  • 1 cup panko breadcrumbs
  • cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • Juice of lime
  • Olive oil for crisping
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • tsp salt
  • tsp black pepper
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven to 400F (200C).
  2. In a bowl, mix garlic powder, smoked paprika, salt, and pepper. Toss salmon cubes in the mixture until coated.
  3. Roll each cube in olive oil and then panko breadcrumbs until fully covered.
  4. Place on a baking sheet and bake for about 12 minutes until golden brown and crispy.
  5. For the Bang Bang sauce, whisk together mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice in a small bowl.
  6. Serve the bites over cooked rice or cauliflower rice and garnish with shredded cabbage, avocado, carrots, green onions, cilantro, and sesame seeds.
