  • 3/4 cup warm milk
  • 2 1/4 tsp active dry yeast
  • 1 large egg
  • 2/3 cup mashed bananas (about 2 bananas)
  • 5 1/4 cups all-purpose flour
  • 1 tsp salt
  • 1/4 cup white granulated sugar
  • 10 TBSP unsalted butter (room temperature and cubed)
  • 3/4 cup brown sugar (packed light or dark)
  • 1 TBSP ground cinnamon
  • 2 bananas (sliced thinly)
  • 4 oz cream cheese (room temperature)
  • 4 TBSP unsalted butter (room temperature)
  • 1 cup powdered sugar (sifted)
  • 1 tsp pure vanilla extract

Instructions

  1. In a mixing bowl, combine warm milk and active dry yeast. Let it sit for about 510 minutes until frothy.
  2. Add the beaten egg, mashed bananas, salt, sugar, and cubed butter into the yeast mixture. Mix well.
  3. Gradually add all-purpose flour until a soft dough forms. Knead on a floured surface for about 57 minutes until smooth.
  4. Place the dough in a greased bowl. Cover it with plastic wrap or a kitchen towel. Allow it to rise in a warm place until doubled in size, approximately 1 hour.
  5. In a small bowl, mix brown sugar with ground cinnamon.
  6. Roll out the risen dough into a rectangle about inch thick on a floured surface.
  7. Spread softened butter over the rolled-out dough.
  8. Sprinkle the cinnamon-sugar mixture evenly across the surface.
  9. Distribute sliced bananas on top of the mixture.
  10. Roll up tightly from one end to form a log shape.
  11. Slice the log into equal pieces (about 12).
  12. Place them cut-side up on a lined baking sheet, leaving space between each roll.
  13. Cover again and let rise for another 30 minutes while preheating your oven to 350F (175C).
  14. Bake in preheated oven for about 2530 minutes until golden brown.
  15. In a mixing bowl, beat together cream cheese and butter until smooth.
  16. Gradually add powdered sugar and vanilla extract; mix until creamy.
  17. Once baked, drizzle with cream cheese icing while still warm, then enjoy your warm Banana Cinnamon Rolls!
