  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 Tbsp Dijon mustard
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 lb boneless, skinless chicken breasts

Instructions

  1. Preheat your oven to 400F (200C).
  2. In a bowl, whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard; season with salt and pepper.
  3. In another bowl, combine grape tomatoes and mozzarella; season with salt and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper, then add to the skillet. Cook until lightly golden on both sides.
  5. Pour the balsamic sauce over the chicken and scrape any browned bits from the pan.
  6. Top with the tomato and mozzarella mixture.
  7. Bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165F (75C). Let it rest for 5 minutes before serving.
