  • ? cup granulated sugar
  • cup shelled pistachios
  • cup packed light brown sugar
  • 2 teaspoons cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon honey
  • 2 tablespoons unsalted butter (melted)
  • cup unsalted butter (room temperature)
  • cup light brown sugar
  • cup granulated sugar
  • 3 large egg yolks (room temperature)
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • teaspoon baking powder
  • teaspoon baking soda
  • teaspoon kosher salt

Instructions

  1. Prepare rose sugar by blending dried rose petals with sugar until fine; set aside.
  2. Make the pistachio filling by grinding pistachios and mixing with sugars, cinnamon, cornstarch, honey, and melted butter.
  3. Cream room temperature butter with sugars until fluffy, then add egg yolks and vanilla.
  4. Combine dry ingredients with the butter mixture until just mixed.
  5. Preheat oven to 350F (175C) and prepare cookie sheets.
  6. Form dough around a spoonful of pistachio filling into balls; roll in rose sugar.
  7. Flatten slightly before baking for about 810 minutes or until golden.
