  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked chicken, shredded or diced
  • 1 tablespoon butter
  • 2 cups fresh broccoli florets
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400F (200C).
  2. Toss diced potatoes with olive oil, salt, and pepper; spread on a baking sheet and roast for 20-25 minutes until golden brown.
  3. Steam or boil broccoli for 4-5 minutes until just tender; drain.
  4. In a saucepan over medium heat, melt butter and heat cooked chicken until warmed through.
  5. In a bowl, mix sour cream, milk, garlic powder, onion powder, and half the cheddar cheese.
  6. In a casserole dish, layer roasted potatoes, chicken, steamed broccoli, and pour the sour cream mixture over top; stir gently to combine.
  7. Sprinkle remaining cheddar and Parmesan cheese on top.
  8. Lower oven temperature to 350F (175C) and bake for an additional 20-25 minutes until the cheese is melted and bubbly.
